Wagyu Brisket Mb 6/7

The meat was good quality, however for a piece of "brisket", the cut was simply terrible. It was basically one piece folded onto another which meant that it technically wasn't brisket and also that I had no chance to achieve the usual crust on the outside, or the evenly cooked middle and rendered fat even after 9 hours on my charcoal weber (and some extra time in the oven). Meat thermometer would give me different readings because the fold of the meat was letting air flow through.
Wondering if I'd paid for the cheaper cut, if I would have been given one single piece. Disappointing because I liked the offerings you had, but will go back to my regular. I'm known for my brisket and I could tell the 12 friends we had over for a BBQ on Saturday were politely enjoying it, but it wasn't up to scratch.
