Japanese Soboro Don with Grain-Fed Black Angus Beef

  • 500g Angus Beef Minced
  • 4 bowls cooked quinoa or rice
  • 4 tablespoons of tamari or low-sodium soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of natural sweetener (optional)
  • 4 medium onions, finely chopped
  • 4 eggs, lightly beaten
  • 2 teaspoons of coconut oil
  • Salt and pepper to taste
  • Green onions, for serving
  • Nori strips, for serving

Cooking instructions:

  1. Prepare your rice or quinoa according to package instructions; set aside to keep warm.
  2. Heat a large skillet over medium-high heat. Add 1 teaspoon of coconut oil, and sauté the onions until they become translucent.
  3. Add the Beef Minced to the skillet. Break it apart with a spatula, and cook until browned.
  4. Stir in tamari (or soy sauce), rice vinegar, and optional sweetener to the beef mixture. Allow to simmer for 2-3 minutes until the liquid is slightly reduced. Adjust the seasoning with salt and pepper.
  5. In a separate non-stick frying pan, heat the remaining 1 teaspoon of coconut oil over low heat. Add the beaten eggs and scramble gently until just set.
  6. To assemble the Soboro Don, divide the cooked rice or quinoa among serving bowls. Layer each with beef mixture and scrambled eggs.
  7. Garnish with chopped green onions and strips of nori. Serve immediately for a warm, comforting meal.
