- 1 tablespoon of natural sweetener (optional)
- 4 medium onions, finely chopped
- 4 eggs, lightly beaten
- 2 teaspoons of coconut oil
- Salt and pepper to taste
- Green onions, for serving

Cooking instructions:
- Prepare your rice or quinoa according to package instructions; set aside to keep warm.

- Add the Beef Minced to the skillet. Break it apart with a spatula, and cook until browned.
- Stir in tamari (or soy sauce), rice vinegar, and optional sweetener to the beef mixture. Allow to simmer for 2-3 minutes until the liquid is slightly reduced. Adjust the seasoning with salt and pepper.
- In a separate non-stick frying pan, heat the remaining 1 teaspoon of coconut oil over low heat. Add the beaten eggs and scramble gently until just set.
