Lamb Kofta with Hummus & Pomegranate
Spiced koftas served over creamy hummus and topped with fresh pomegranate — perfect for a weekend feast or fuss-free dinner.
Ingredients
For the Lamb Kofta (Makes 10–12):

1 small onion, finely grated

3 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander
-
1 tsp smoked paprika
-
½ tsp ground cinnamon

Salt and black pepper, to taste

2 tbsp chopped fresh parsley or coriander

1 tbsp olive oil (for brushing)
To Serve:

1 cup hummus (store-bought or homemade)

½ cup fresh pomegranate seeds

Handful chopped fresh parsley (garnish)

Warm flatbread or pita

Lemon wedges
Instructions
1. Prepare the Kofta Mixture
In a large bowl, combine the lamb mince, onion, garlic, spices, salt, and herbs. Mix well with your hands until fully combined and slightly sticky in texture.
2. Shape the Koftas
With damp hands, shape the mixture into small, oval-shaped koftas or press onto metal/bamboo skewers for grilling.
3. Cook the Koftas
Heat a grill pan or skillet over medium-high heat. Lightly brush the koftas with olive oil and cook for 8–10 minutes, turning occasionally, until browned on the outside and cooked through.
4. Plate and Serve
Spread a generous layer of hummus on a serving plate. Place the cooked koftas on top, sprinkle with pomegranate seeds and fresh parsley. Serve with flatbread and lemon wedges on the side.
